7 Layer Taco Dip

 

The Super Bowl is this weekend and that means Super Bowl parties and lots of snacks! We always try to find good alternatives to traditionally unhealthy foods and this layered taco dip is no different. While we splurge a little with a sour cream layer, we make up for it with black beans, guacamole, and lots of fresh veggies. This dip is a healthier take on some of the taco dips we’ve seen, but is hearty and rich – sure to please everyone!

 

What you need:

- 1 can black beans, drained

- 1 packet of taco seasoning

- 1 cup guacamole (I used store bought, but you can also make your own)

- 1 cup sour cream

- 1 ½ cups shredded lettuce

- 1 cup chopped tomatoes

- 1 cup chopped cucumber

- ¼ cup chopped red onion

- 2 Tbsp water

- salt and pepper to taste

- fresh cilantro (optional)

 

What you do:

  1. Blend beans, ½ of the taco seasoning, and water in a food processor. Chill for 1 hour.
  2. Combine sour cream and the rest of the taco seasoning in a bowl. Chill for 1 hour.
  3. While the beans and sour cream are chilling, you can prepare the rest of the ingredients. If you are making homemade guacamole or need to chop the veggies, do this now.
  4. Layer in a serving dish:

- Black bean mixture

- Guacamole

- Sour cream mixture

- Lettuce

- Tomatoes

- Cucumber

- Red onion

  1. Sprinkle salt and pepper over the top and garnish with fresh cilantro.
  2. Serve immediately with tortilla or pita chips!

For a larger crowd, double the recipe!
